River Tweed and Floors Castle

The BBC were back on the Tweed this week with Rosemary Shrager and Tim Wonnacott visiting Floors Castle on the River Tweed in Scotland, where Queen Victoria stayed for three days in 1867. Tim Wonnacott enjoys a casting lesson from Spey Casting World Champion and rod specialist Ian Gordon using a green heart rod which is a art form in itself to cast.

Appropriately for a castle resting on the river Tweed, Rosemary and food historian and chef Ivan Day prepare a special royal dish, salmon à la chambord. Created by chef Antonin Carême, often considered to be the first celebrity chef, it is an elaborate dish of poached salmon garnished with sole, truffles and crayfish.
